A universal joint is destroyed more often by the way it is fitted than by the work it does. The cross must go in square, the needle rollers must all stay upright in their cups, and the snap rings must seat fully in their grooves. After that, a working truck needs the joint greased far more often than the handbook of a car would suggest.

Why do needle rollers fall over during fitting, and what does it cost?

The rollers are held in the cup only by the grease, so tipping the cup or pushing the cross in at an angle lets one drop flat. The cap then presses in feeling almost normal, and the joint runs with one roller lying on its side. It will tighten or seize within days. Pack the cup with fresh grease before assembly and check every roller is standing before the cap goes on.

How do I know the snap rings are properly seated?

Run a fingernail around the groove — a seated ring sits flush and cannot be lifted at any point. If a ring will not go in, the cap is not pressed deep enough, usually because a roller has tipped or because the opposite cap has moved outward. Never grind a ring thinner to make it fit; that is how a joint comes apart under load.

How often should a greasable joint actually be greased?

For a truck in daily service on unsealed roads, every service interval, and after any deep water crossing. The grease is not there only to lubricate — it also pushes water and grit back out past the seals, which is most of what protects the rollers. Pump until fresh grease appears at all four seals, not just at the first one.
