Four things decide the right part: which axle it is for, whether the vehicle is two or four wheel drive, whether that corner has ABS and of which type, and the physical dimensions. Once the correct part is in hand, the hub nut torque decides how long it lasts, because that nut sets the internal clamp on the bearing.

Why is the hub nut torque so high, and can I just do it tight?

On a sealed hub the nut clamps the inner race against the shaft shoulder, and that clamp is what stops the race creeping and fretting on the shaft. Figures of 200 to 350 Nm are normal on a light truck. Too loose and the race moves and wears the shaft; too tight and you can crush the seal land. It must be set with a torque wrench, not by feel.

Can a pressed-in bearing be fitted with a hammer and drift?

It can be removed that way but it should not be fitted that way. Driving a bearing in means the blows pass through the balls or rollers from one race to the other, and each blow leaves a tiny dent on the raceway. The bearing will feel fine at first and then hum within a few thousand kilometres. Press on the race that is being fitted, never through the bearing.

Should both sides be replaced together?

Not necessarily, but consider it on a high-mileage vehicle. The two sides have done the same distance under the same loads, so when one goes the other is often close behind. On a vehicle that is already in the workshop with the hub off, the extra part cost is far less than a second visit.
