What happens if I replace only one side?

The new shock absorber resists movement far more than the worn one beside it, so under braking or cornering one side of the axle controls the body while the other side keeps moving. The vehicle pulls toward the stronger side under braking and leans unevenly in corners. In the worst case this behaviour appears suddenly in an emergency stop, which is exactly when it is least manageable.

Why do both sides wear at the same rate anyway?

Both units on an axle have travelled the same distance, carried the same load and worked through the same road surfaces. If one has failed the other is close behind it, even if it has not failed yet. Replacing only the failed unit means returning for the second one soon and paying the labour twice.

Should I replace all four at once?

Not necessarily. Front and rear wear at different rates because the front axle carries the engine and takes the weight transfer under braking, so it is normal to replace the front pair more often than the rear. Have the other axle inspected at the same visit so you know whether it is close behind, and replace all four together if it is.
